About Us
The Grill 603 Story
Our Origins |
The food at Grill 603 is inspired by my time in the restaurant industry on the eastern seaboard. I started working in restaurants at the age of 16. By the time I was 23, I was in charge of a bustling kitchen with more than 20 employees. As I moved up the corporate ladder and opened new restaurants, I realized my passion for this business. That passion was interrupted when my wife invited me to be her partner in a retail venture that lasted 12 years. Once that ended, I gravitated right back to food service. I started a catering operation for a Yacht Charter operation in Washington DC. When my wife decided to take the family to the Chesapeake Bay in Virginia to pursue her career in health and wellness, I jumped at the chance because there was an opportunity to open my own restaurant. When she needed to bring us to SNH to further her career goals, I was onboard.

Starting Grill 603 |
After moving to Amherst NH with my family, in support of my wife’s career I began looking for a new adventure. Having recently sold my restaurant in Virginia, I was anxious to find a great location to start a new restaurant concept in SNH. After looking at more than a dozen properties I found what I was looking for in Milford when Chapanga’s finally gave up the fight and closed their doors. I was able to quickly negotiate a deal and get the new Grill 603 open and off the ground.
I was anxious to open a new restaurant in the area because I feel that it is underserved. Although there are plenty of restaurants, most of the ones in Milford are only open for breakfast and lunch, or they only serve ethnic cuisine like pizza or Chinese food, or they are only open certain days a week. After eating at most of these establishments my family and I quickly realized that there was nor a place that really “fit” us. We needed a place where we could hang out in a comfortable atmosphere, that wasn’t too expensive, and served great food at reasonable prices. Since we couldn’t find that place we decided to open our own, Grill 603. |
Our Values |
Everything at Grill 603 is scratch. We make all of our own dressing, sauces, and desserts. All of our proteins come in fresh from the best vendors. Since we make everything in house it gives us a great deal of control over the consistency and allows us to control our costs. That benefits the guest by letting us give you a great value. The staff has been trained to say yes until it hurts. We accommodate guests special requests, allergies, and whims as often as possible. We have a limited menu, but all of the major proteins are accounted for. We also have vegetarian offerings, and are a gluten friendly restaurant. In fact, we have a dedicated gluten free fryer that we only use for French fries. A lot of French fries these days are sprayed with gluten to make them hold longer. We use a special fry that is of the highest quality to allow this special offering.

Message To Our Community |
I hope you will join us at Grill 603 soon. We have a dedicated staff that are here to serve you and the community. We are open 7 days a week so you know you can count on us. We are also an active participant in the community. We hold regular fundraisers for different community service organizations. Most recently we held a fundraiser for the Boys and Girls club of Souhegan Valley, in support of their new Gym and teen center. The evening was a big success, raising more than $400 through our efforts and a matching donation. We have also participated in the local Lions club penny sales, the American Legion raffle and others. I am so pleased to be a part of this community. I hope that you will support us, so that we can all grow together.
Thank you, Eric Griffin |
